Pumpkin Chocolate Pancakes
8-10 small pancakes

Pumpkin and chocolate are a wonderful combination (especially when it comes to these healthy pancakes!) This recipe is easy to make and can be enjoyed by the whole family.

  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/4 tsp salt
  • 1 Tbs coconut oil, melted
  • 1 Tbs maple syrup
  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 1/2 cup Choco Chimps Cereal
  1. In a small bowl, combine the flour, baking powder, baking soda, spices and salt, and mix to combine.
  2. In a large bowl, combine coconut oil, maple syrup, milk and pumpkin puree. Add the flour mixture, and mix a few times until just combined.
  3. Heat a frying pan until fairly hot, and pour about 1/4 cup of batter to form a small circle.
  4. Carefully place the Choco Chimps all over the pancake with your fingers and press down. Let cook until the pancake is bubbling, and flip. Cook another minute or so until the pancake is cooked all the way through. Repeat with remaining batter and serve immediately.
